Shepherds’ mountain dwellings have different names depending on which side of the valley they are located. They are known as ‘cujalas’ on the Béarn side and “cayolars”, on the Basque side.
Ossau Iraty is excellent for cooking, especially when mature. It can be grated and used in risottos, soups or gratins.

Ossau-Iraty (PDO)
This thousand-year old ewe’s milk cheese evolved from pastoral farming in the region. It was used as a currency in many 14th century sales or tenancy contracts, as cheese was the first source of revenue for shepherds. Its name echoes its origins in the valley of Ossau in Béarn and the Iraty massif in Basque country. This cheese keeps for a long time and is traditionally served with black cherry jam, although some enthusiasts advise trying it with quince paste.
