Perfect wine match: Arbois, an AOC wine from the Jura region


Morbier (PDO)
The ash-black line which seems to separate Morbier into two distinct halves is an intriguing, distinctive feature, only explained by turning back the clock two centuries. Farmers living in isolated farms in Franche-Comté used to make their cheese in a two-stage process. The morning’s milk curds were moulded and covered with a fine protective layer of ash. In the evening, they added curds from the second milking, sandwiching the ash layer between the curds. Today the ash line is purely decorative, but it makes this soft and supple cheese truly unique.
