Savoy cheeses offer a wide and varied array of rich flavours throughout the year. The variations in flavour are not only due to the animal feed: grass in summer and hay in winter, but also to the raw milk, which allows for a greater aromatic diversity.

Beaufort (PDO)
Why is it that Beaufort wheels have a concave heel? Simply because after moulding in linen cheese-cloth, this cheese, made from Tarine or Abondance cows’ milk, is pressed into a beechwood mould which gives it its characteristic shape. Summer Beaufort (‘été’) is readily found at your specialty cheese shop. It is produced between June and the end of October, when cows graze in mountain pastures. Beaufort ‘Chalet d’Alpage’ is made twice a day in mountain chalets above an altitude of 1,500 metres, using milk from a single herd and made in the traditional know-how .
